Welcome to the Flawless Steaks Recommendations section, a carefully vetted list of the tools we use to prepare our flawless steaks.  We’ve found what we believe are the best steak cuts for grilling or making a stove top steak, as well as the accessories you’ll need to equip your kitchen for success.

Best Cutlery

You simply aren’t going to find the best steak knives at your local store.  The cutlery sold there is most likely made in China and will start to come apart as soon as you’ve figured out how to cook that perfect medium bone-in ribeye.  If you want something that you love to hold in your hand – that feels like quality and cuts like butter – you need to order it online.

Because we’re here to help you make flawless steaks (and you can’t really enjoy a flawless steak without a knife, can you?), we’ve tried a few and laid out our top three here below.  We use this cutlery whether we’re thin-slicing a prime filet or digging into a flavorful new york strip.

When we have friends over, we love to cook a bunch of medium rare steaks and grab the Victorinox.  Thin sliced filet mignon on a sliced baguette makes a perfect hors d’oeurve.  The razor-sharp edge on this knife and made-in-Switzerland pedigree earn it high marks.  If you’re feeling brave, you can also use it to trim your steaks before cooking them.

This is the best set of steak knives we’ve found under $100.  Wusthof has been making knives for over two centuries; everything they do is quality.  The value here is truly incredible.  These knives are balanced, durable and very sharp.  You won’t find a better set anywhere for the money.  Also makes for a great steak knife gift set.

We absolutely love these knives.  They are very high-end but don’t cost a fortune.  Cangshan has won many awards for their outstanding cutlery, and now that we own a set, we understand why.  Extremely durable and sharp, they’re also beautifully styled and crafted, and come with a gorgeous hand-made wood block.

Best Online Meat Vendor

You simply aren’t going to find the best steak cuts – USDA Prime or Kobe-style American Wagyu beef – in the meat section of your local Save-a-Lot grocery store.  If you want something truly special – a buttery USDA Prime Filet, a succulent Wagyu Manhattan Filet, a dry aged steak (or dry aged meat of any kind, for that matter) – you need to order through an online butcher.

Fortunately for you, we’ve tried quite a few and found the best.  This is truly our go-to for a delicious USDA prime ribeye (we especially love the bone-in ribeye), a prime strip steak or any kind of high quality beef.  The average Joe might be satisfied with whatever he finds at the local butcher.  And we’re not knocking it.  We’ve had some amazing steaks from meat bought at CostCo.  But when we’re looking for that perfect steak experience, we go to our premier vendor:

Because they’re involved in the entire lifecycle of the meat they sell, we have a high degree of confidence in their product. They offer USDA Prime and Choice steaks, but their specialty is a Wagyu/Angus cross cattle raised along the high plain of the Snake River in Eastern Idaho.

Snake River Farms has a clean, simple website that’s easy to use. They have a sale section which is always changing; we like to watch there for the best deals.

The steaks come beautifully packaged (they ship with dry ice to keep the steaks cold and fresh). We recommend the American Wagyu Gold Grade Manhattan NY Filet. It’s out-of-this-world tender and delicious.

Best Cast Iron Skillets

Cooking the perfect pan seared steak starts with a great cut (our favorite online meat sellers are found here), but whether you’re going to finish cooking the steak in the oven or you’re looking to master the reverse sear, you aren’t going to get far without a cast iron skillet.

Below you’ll find the two cast iron skillets we couldn’t live without.  We use one or the other pretty much every day.

We love cooking steak in cast iron skillets, and this is the gold standard.  Lodge has been making quality cast iron for over a hundred years.  You don’t need anything fancier than this.  We cook almost every perfect medium rare steak we make in this 12-inch pan.  Take care of it and you can pass it on to your grandkids so they can make flawless steaks too.

Lodge Cast Iron Square Grill Pan

We pull this out when we want that grilled-steak taste but it’s too cold to stand outside attending to the Weber.  It cooks the steaks just as good as any other cast iron skillet, but goes the extra mile by putting gorgeous grill marks. For us, the square shape took some getting used to but it’s actually quite practical.  Lodge hit a home run with this square grill pan.

Best Kitchen Gear

This slick device works as a stand-alone thermometer and also talks seamlessly via bluetooth with the very good Weber grilling app.  We originally bought this to help us smoke brisket, but we’ve found it works great for the reverse-sear in the oven, especially on those thick steaks.  Either in the oven or on the grill, we get a perfect 130-degree medium rare steak using the iGrill2 every time.

The Japanese know a thing or two about knives.  Turns out, they know a thing or two about cutting boards, too.  This gorgeous Japanese cutting board is naturally anti-bacterial and will actually make your knives last longer (it’s durable, yet soft enough not to mess up your high-end blades).  This cutting board even smells amazing.  It’s worth every single penny, and you won’t find one like it at your local store.
